Moroccan confectionery workshop with Ahmed Kabadi (confectioner) and Sebastian Schellhaas (gastro-anthropologist)
Δ The World in a Spoon: The bitter history of the sweet stuff

A world without sugar? Inconceivable! Sugar has long been a central and irreplaceable component in global food supplies. Its 10,000-year expansion is linked not only with a revolutionary change in global eating habits, but just as closely with the history of colonialism and slavery.

In a brief introductory lecture Sebastian Schellhaas will offer an insight into the cultural history of sugar from its origins in Melanesia to its present-day ubiquity. In the subsequent baking workshop, Moroccan confectioner Ahmed Kabadi will prepare samples from one of the world’s oldest confectionery traditions together with the participants.
